Frozen Coke and Popcorn Ice Cream

Anyone who knows me well knows that I LOVE popcorn. During the process of ice cream recipe development I, of course, had some freshly popped popcorn on hand as a snack.

I thought, “How about some popcorn ice cream?”

That evolved into this recipe, a combo I loved as a child: Ball Park Fountain Co-Cola and a bag of popcorn. I would proceed to pour a fair amount of the popcorn into the coke. Love. IT.

It’s a basic no-cook ice cream recipe, and I substituted almond milk for the nuttier flavor it might add. It also helped keep this more on the “icy” side.

Frozen Coke and Popcorn Ice Cream

  • 2 cups cola
  • 1 cup almond milk
  • 1/2 cup freshly popped popcorn
  • 1/4 cup honey
  • 1 tsp. vanilla extract
  • 1 tsp. salt

How-To:

Mix all ingredients – except popcorn – together in a large bowl, stirring well to combine. Pour mixture into ice cream maker bowl.

Churn per manufacturer’s  instructions. When ice cream is almost done, mix in popcorn.

Freeze for approximately two hours and serve. (With extra popcorn!)
